Protein Rich Bean Salad

This dish is one of my favourite summer recipes. It is loaded with plant-based proteins and rich in essential omega-9 fatty acids, iron, and vitamin C. Although light and low in calories, this salad is incredibly filling. It is best served cold, which makes it perfect to enjoy on hot summer days. 

Recipe:

Ingredients:

  • 1 cup black beans, washed and cooked
  • 1 cup quinoa, cooked
  • 2 tomatoes, chopped
  • 1 cucumber, peeled and chopped
  • 1/2 freshly squeezed lemon juice
  • 4 tbsp avocado oil 
  • Salt, oregano and pepper to taste 

Directions:

Place all ingredients in a bowl and mix together. Store in the fridge for up to three days.
