Buddha Bowls are a fun way to incorporate more healthy nutrients into your diet. The beauty of Buddha Bowls is that they are so simple to make, yet so nourishing. This Green Buddha Bowl recipe makes a great lunch or dinner for two.

Ingredients :
- 1 cup cooked quinoa
- 1 avocado
- 1 cucumber, sliced
- 1 tomato, sliced
- 1 kiwi, sliced
- 100 gr tofu (drained)
- 1/2 cup chopped leafy greens such as baby spinach, kale or microgreens
- 1tbs pepitas
Dressing:
- 1 freshly squeezed lime
- 2 tbsp avocado oil
- 2 tsp dried thyme
- Salt to taste

Start by cooking 1 cup quinoa in 2 cups water and a dash of salt in a medium pot for about 15-20 minutes or until quinoa absorbs all the water. Once the water is all absorbed, remove the pot from heat, cover it, and let the quinoa steam for 5 minutes. While the quinoa is cooking, make the dressing by combining freshly squeezed lime juice, avocado oil, dried thyme, and salt. Combine the quinoa, avocado, cucumber, tomato, kiwi, greens, and tofu in a medium-large bowl and drizzle with the dressing. Enjoy!
