Beet and Roasted Sesame Salad

Did you know that beets have been used for medicinal purposes since ancient times? They are loaded with nutrients that are hard to get from other foods. The plant chemicals in beets, called betalains, can stimulate detoxification of the liver and blood, which is essential to maintain health. Besides, beets tone the blood and help the body build red blood cells. These beets’ properties can help boost energy when we are feeling lethargic, weak, and tired. One more fantastic health benefit of the beets is their ability to flush out table salt (which often can cause bloating) from the body. 

 This salad can be stored in the fridge for up to 3 days. You can combine it with cooked quinoa or brown rice for a complete meal. 

Recipe:

Ingredients:

  • 4 large beetroots, peeled, washed and grated
  • 3 carrots, peeled, washed and grated
  • 1 tbs roasted sesame
  • 1 tbs balsamic vinegar
  • 1 tbs walnuts, chopped 
  • 1 freshly squeezed lemon
  • 1 tbs olive oil 
  • 2 cloves garlic, minced (optional) 

Directions: 

Mix all the ingredients together and leave in the fridge overnight before serving.
