Walnut and Fig Summer Salad
Warm summer evenings are meant to be enjoyed on a patio with good friends or perhaps with a good book in your hands. Add to this Walnut and Fig light and refreshing salad, relax and enjoy the moment.
The sweet flavour of fresh figs and their rich potassium content can soothe the nerves and calm the mind. Moreover, omega-3 fatty acids from walnuts may further contribute to your good mood. For a more vibrant flavour and a crunchier texture, use toasted walnuts. Otherwise, use them raw.

Ingredients:
- 2 handfuls toasted walnuts, halved
- 2 cups mixed greens
- 100 gr blue cheese (or any other cheese by your choice), cubed
- 6 medium fresh figs
- 1 freshly squeezed lemon juice
- 2 tbsp raw honey
- 1 tbsp olive oil
Preheat the oven to 350°F. Spread walnuts on a baking sheet in a single layer. Bake for 8 to 10 minutes, until they start to brown and start smelling toasty. Take them out of the oven and let them cool down for several minutes. In the meantime, use the lemon juice and honey to make a dressing. Toss all the other ingredients in a large bowl and mix. Drizzle with the dressing you made. Serve and enjoy!
