Leek and Potato Soup
Cream soups are my favorite. Apart from being very easy to prepare, the right choice of ingredients can make them a great, healthy, nutrient-dense meal. For today’s lunch, I chose a cream soup that is very rich in fiber and for that reason facilitates bowel function and stimulates bowel movement. This cream of leek and potato soup is a great choice for any time of the year, but it is especially enjoyable in winter when warm meals and drinks warm up both your body and soul.

Ingredients:
- 500 gr leeks
- 300 gr potato
- 1 1/4l water
- sea salt
- a pinch of pepper
- 4 tbsp olive oil
Directions:
Peel, wash and cut the leeks and potatoes. In a medium pot, sauté the leeks and potatoes. Add water. Bring to a boil and then let it simmer for 15 minutes. Add salt and paper to taste. Stir occasionally. Puree the soup with a hand-held blender. Serve warm.
